Ingredients
Brussels sprouts
1 lb Brussels sprouts
1–2 Tbsp olive or avocado oil
Salt & pepper
Spicy Thai Peanut Sauce
We’re not above hitting the easy button and picking up a premade peanut sauce at the store, but here’s how to make your own!
2 Tbsp peanut butter
1 Tbsp coconut aminos or soy sauce
1 Tbsp lime juice
1–2 tsp sriracha, to taste
1 tsp honey or maple syrup
1–2 Tbsp warm water, as needed
Directions
Clean & halve Brussels sprouts.
Toss with oil, salt and pepper.
Bake at 400°F for 15–20 minutes, cut-side down, until browned and tender.
Mix peanut butter, coconut aminos, lime juice, sriracha and honey. Add warm water until smooth and drizzle-able.
Toss or drizzle sauce over hot Brussels sprouts.
Finish with a squeeze of fresh lime and, if desired, chopped peanuts, cilantro or green onion.
Tip: For extra crispy Brussels sprouts, give them a few additional minutes under the broiler before adding the sauce.
