RECIPE: Pear Salad
This crowd-favorite salad is easy to make, packed full of nutrition, and perfectly timed for autumn.
Ingredients
Salad
8oz citrus greens (or any mixed greens)
2 soft ripe pears, sliced very thin 
¼ cup blue or gorgonzola cheese crumbles
¼ cup halved pecans
Dressing
3 Tablespoons olive oil
2 Tablespoons red wine or apple cider vinegar
1 teaspoon honey (or hot honey if preferred!)
½ teaspoon dijon mustard
Himalayan salt & course ground pepper to taste
Directions
- In a large bowl, whisk dressing ingredients to combine and emulsify. Season with salt and pepper to taste. 
- Add 8oz citrus/mixed greens to bowl with dressing. Toss to coat. 
- Add pear slices, cheese crumbles, and pecans to salad. Toss or arrange as desired. 
- Enjoy alone, or pair with seared wild caught salmon for some added protein and fat!
