RECIPE: Mediterranean Salad

Mediterranean foods are known for nourishment and longevity. This salad is no different. Full of good fats, this salad will satisfy any palate and is easy to whip together!

Ingredients

Salad
9oz basket cherry tomatoes, washed and halved
2-3 Persian cucumbers, sliced and halved
1 yellow pepper, chopped
½ small red onion, chopped
½ cup Kalamata olives, pitted
8oz block feta cheese, crumbled

Dressing
¼ cup olive oil
Fresh juice from 1 small lemon
2 Tbsp red wine vinegar
½ tsp Dijon mustard
1 tsp minced garlic (or to taste)
Pinch of oregano

Directions

  1. Wash and dry all produce. Using a sharp knife, carefully halve the cherry tomatoes. Slice and halve cucumbers to make half moon shapes. Chop bell pepper to match the cut cucumbers slices’ size. Chop red onion as desired and use a knife or fork to roughly crumble feta.

  2. In a small bowl, combine olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, and oregano. Whisk to emulsify. Add salt and pepper to taste.

  3. Add all prepped salad ingredients to large bowl and toss with dressing to coat evenly. Season to taste. Enjoy!
